Potato Salad With Vegan Mayo
This Potato Salad delicious and it's simple to make, and boy does it taste great! I make it for my family often and it doesn't last long. I used Vegan Mayo because I like the taste, but you can use any type of Mayonnaise. Make sure you use red potatoes as they are more waxy, less starchy, peel easy, and hold their shape well.

Ingredients
Red Potatoes
1 1/2 Cups Mayonnaise (I used Vegan Mayonnaise )
1 Can of Peas and Carrots (drained)
2 Hard boiled Eggs cut in 1/4's
Parsley for garnish
3 Pickles for Garnish (cut in fan shape)
2 Chopped Pickles
Salt and Pepper
Paprika
Steps
Bring whole potatoes to boil then simmer 15-20 min, do not overcook
Let potatoes Cool
Hard boil 2 eggs and cut in 1/4's
Peel potatoes
Cut potatoes in little cubes
In a bowl add potatoes and chopped pickles
Add mayo
Add peas and carrots
Add salt & pepper
Gently mix PRESENTATION
Flatten potatoes in a nice mound
Place eggs face down in a circle
Place fanned pickles between eggs
Add a few sprigs of Parsley
Sprinkle some Paprika, Salt & Pepper
Wrap with plastic wrap and refrigerate.
