Potato Salad with Vinaigrette

A quick easy mayo free potato salad that is really delicious! My family loves it. Its Vegan as well. Make sure you use red potatoes they are more waxy and less starchy then Russets. They are excellent for this type of salad. And are easy to peel once cooled. I used oil and vinegar liberally, as this salad needs that generous amount. Enjoy!

Ingredients
6 Red Potatoes
1 Red Onion Chopped Sliced
Olive Oil
Red Wine Vinegar
White Vinegar
Parsley Chopped
Salt & Papper
Steps
Bring potatoes to boil then simmer for 15-20 min
Drain and let cool
Chop red onion and add to potatoes
Add liberal amount of olive oil, splash of white vinegar
Add a liberal amount of wine vinegar
Add parsley
Add salt & pepper
Mix
