Rustic Tomato Soup
My family raves about this soup! It is delicious, fresh, flavorful wholesome goodness. Organic Tomatoes on the Vine are the next best thing to freshly picked tomatoes, the smell is divine!

Ingredients
2 lbs + Tomatoes on the Vine ( I used Organic) Quartered
3-4 Tbs Olive Oil
1 Large Red Pepper Chopped
1 Onion Chopped
3 Large Cloves of Garlic Chopped
1/4 Tsp Basil
1/2 Tsp Oregano Parsley (a few sprigs)
Salt & Pepper
4-5 Tbs Tomato Paste
1 1/2 Cups Vegetable Broth (or more depends on how thick you like)
Baking Pan
Blender
Steps
Heat oven to 400F
Wash and cut Tomatoes in 1/4's
Peel Garlic and chop
Chop Onion
Chop Red Pepper
Add Tomatoes to a pan (I use a cookie sheet with low sides)
Add Onions, Red Pepper, Parsley, Oregano, dash of Pepper Flakes, Salt & Pepper
Add a generous amount of Olive Oil ( I just eye ball it) see my video
Mix well and pop in oven and roast for until onions are caramelized and tomato skins are peeling off 40 +min or so depending on your oven,
When done add to blender (I don't blend long, I prefer it chunky for taste and look.
Pour in saucepan add the Vegetable Broth, Tomato Paste, some Parsley
Bring to boil turn of heat and its ready!
